HERE is my potato recipe, soon to be world-famous. GREAT FOR CAMPFIRE COOKING! HERE is what you need:
Aluminum Foil
1-4 Potatoes
1-2 Onions
Olive Oil
Butter / Margarine
Garlic Salt
Oregano
Rosemary
Any other flavoring you might like to go with these
1. skin potatoes. Cut into long quarters, then into bite-size pieces.
2. Chop the onion(s). add them to the mix. I use a bowl to mix them better.
3. Tear off a square of aluminum foil. Put potato & onion on the aluminum foil, but not too much so that you can enclose it all like an aluminum burrito. 🙂
4. To prevent the bottom potatoes from burning, and to make the rosemary adhere to the top of the pile, pour some olive oil over the potatoes. NOT TOO MUCH: otherwise they might turn out a little too greasy. I’d guesstimate no more than 2 tablespoons.
5. Put a dab of butter on top! or, several small dabs around the top. Or spread margarine across it. Whatever! Maybe some other substance besides butter or margarine. I have not explored other options.
6. Now, sprinkle some garlic salt on them. As much or as little as you want. Maybe some pepper, but not too much pepper. The key is the ROSEMARY. It will give the onions a sweet flavor, and make the potatoes good, too. No more than 20 little rosemary pieces, I’d guesstimate.
7. Close up the packet, so that the moisture mostly stays in. Throw into an oven at 450, or a campfire.
8. It will take about 45 min to cook. I don’t know exactly how long. Times are always wrong for me in recipes anyway, so: “Cook until Done” are my instructions! You will probably have to open up a packet to check the consistency of the potatoes after about 30 min. to appease your anxious stomach!
9. The finished product… oops… too much flash on the photo and I had to doctor it so that you could see the delicious goodness! Sorry… it’s barely visible.
10. EAT EAT EAT!!! Not only good for campfires, but goes good with roasted chicken!!
